Instructions

  1. Pat tuna steaks dry with paper towels and season both sides with salt and pepper.
  2. Prepare salad ingredients by washing and drying greens, slicing vegetables, and placing them in a large bowl.
  3. Mince garlic, chop fresh herbs, and measure cream and other sauce ingredients.
  4. Heat a heavy skillet over medium-high heat until hot, then add a thin film of oil and swirl to coat.
  5. Sear tuna steaks in the hot skillet without moving them until a brown crust forms, about 1–2 minutes per side for rare; increase time for more doneness.
  6. Remove tuna from the skillet and let rest on a cutting board for about 5 minutes.
  7. Lower heat to medium, add butter or a little oil to the same skillet, then sauté minced garlic until fragrant, about 30 seconds.
  8. Pour in heavy cream, bring to a gentle simmer, and cook until the sauce thickens slightly, about 2–3 minutes.
  9. Stir in a splash of white wine or lemon juice (if using), season with salt and pepper, and simmer 30–60 seconds more to balance flavors.
  10. Taste the sauce and finish with chopped parsley or other herbs as desired.
  11. Toss salad greens and vegetables with vinaigrette or dressing until evenly coated.
  12. Slice the rested tuna against the grain, arrange on plates, spoon the creamy garlic sauce over the steaks, and garnish with herbs and lemon wedges.
