A creamy, nutritious and easy-to-make tiramisu-inspired chia pudding that requires no blender, made with chia seeds, coffee, vanilla protein powder, and topped with vanilla yogurt and cocoa powder.

  • 1 cup milk of choice (240g)
  • 1/4 cup chia seeds (45g)
  • 3 tbsp strong brewed coffee or espresso (45g)
  • 3 tbsp vanilla protein powder (21g)
  • 1 1/2 tbsp sweetener of choice (22g)
  • 1/8 tsp salt (optional)
  • 10 oz vanilla yogurt or plant-based yogurt (280g)
  • 1 tsp cocoa powder (2g)

Instructions

  1. Gather and measure all ingredients and grab a container with a lid or several mason jars and a spoon for mixing.
  2. Whisk together chia seeds, milk, brewed coffee (or 1/2 tsp instant coffee dissolved in milk or 2 tsp matcha), vanilla protein powder, sweetener, and salt until fully combined (mix in serving jars or in a bowl).
  3. If using instant coffee, dissolve it in warm milk before adding; if using matcha, add powder directly (no extra liquid needed).
  4. Optional: For a smoother pudding, blend or pulse the mixed chia mixture briefly before chilling.
  5. Stir the mixture again 5–10 minutes after mixing to help avoid clumps.
  6. Cover the container(s) and refrigerate for at least 3 hours or overnight until thick and gelled.
  7. If your yogurt is unsweetened, sweeten it while the pudding sets.
  8. Spoon or spread yogurt over each chilled portion.
  9. Dust each serving with cocoa powder before serving.
