Ingredients

Scale
  • 1 2/3 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 15 oz canned pumpkin puree
  • 2/3 cup Imperial Sugar granulated sugar
  • 2/3 cup Imperial Sugar brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup pumpkin seeds (pepitas)

Instructions

  1. Preheat oven to 350°F (175°C) and grease and lightly flour a 9×5-inch loaf pan.
  2. Whisk together the dry ingredients: all-purpose flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla until smooth and well combined.
  4. Slowly add the dry ingredients to the wet mixture, folding gently until just combined—do not overmix.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Sprinkle pumpkin seeds evenly over the surface and press them down lightly so they stick into the batter.
  7. Bake for 50 to 70 minutes at 350°F, or until a toothpick inserted into the center comes out clean.
  8. If the top starts to brown too much, tent the loaf loosely with foil to prevent overbrowning.
  9. Let the loaf cool in the pan for about 10 minutes, then transfer it to a cooling rack to cool completely.
