Tasty and wholesome granola bars made with sourdough discard, oats, peanut butter, honey, and customizable mix-ins. Perfect for a healthy snack or breakfast, easy to make and freezer-friendly.

  • 2 cups quick oats, or rolled oats
  • 1/2 cup semi-sweet chocolate chips, or choose your favorite chocolate chips
  • 1/2 cup chopped roasted mixed nuts with sea salt, or add 1/2 teaspoon salt if nuts aren’t salted
  • 2 tablespoons chia seeds
  • 1/2 cup sourdough discard
  • 1/3 cup peanut butter, creamy or crunchy
  • 1/3 cup honey
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt, or adjust to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Butter an 8×8-inch pan and line it with parchment paper, then butter the parchment; set the pan aside.
  3. Chop roasted mixed nuts if they aren’t already chopped.
  4. In a large bowl, combine the oats, chocolate chips, chopped roasted nuts, and chia seeds.
  5. Add the sourdough discard, peanut butter, honey, and vanilla extract to the dry mixture.
  6. Stir until the mixture is completely combined, using a spoon or fork as needed.
  7. Transfer the mixture into the prepared pan.
  8. Use a fork or the bottom of a measuring cup to spread and press the mixture firmly and evenly into the pan.
  9. Bake 14–15 minutes, or until the edges are set and lightly golden brown.
  10. Let the bars cool in the pan for at least 30 minutes.
  11. Transfer the bars to a cooling rack and cool completely.
  12. Cut into bars.
