An easy, hydrating watermelon popsicle recipe combining juicy watermelon sweetness with a zesty lime twist. Naturally dairy-free, gluten-free, and perfect for beating the summer heat.

  • 4 cups (600g) watermelon chunks, seedless
  • 2 tablespoons (30ml) freshly squeezed lime juice
  • 1 tablespoon (15ml) honey or agave syrup (optional)
  • Mint leaves (optional)
  • Pinch of sea salt (optional)

Instructions

  1. Cut your watermelon into chunks, removing the rind and any visible seeds.
  2. Add the watermelon chunks to your blender and blend until smooth. If needed, strain the puree through a fine mesh strainer to remove any pulp or seeds.
  3. Squeeze two limes (about 2 tablespoons or 30ml of juice) and add it to the watermelon puree. Stir well to combine.
  4. Taste the mixture. If your watermelon isn’t super sweet, add 1 tablespoon (15ml) of honey or agave syrup and stir again.
  5. Carefully pour the mixture into your popsicle molds, leaving a little space at the top for expansion during freezing.
  6. Insert the sticks, ensuring they’re centered so the popsicles freeze evenly.
  7. Place the molds in the freezer for at least 4 hours, or until completely frozen.
  8. Run the molds under warm water for a few seconds to loosen the popsicles, then gently pull them out.

Notes

For added fun texture, stir in small chunks of watermelon or a bit of lime zest before freezing., Keep your popsicle molds standing upright while freezing to avoid spills., To get creative, try freezing half the mixture first, then add a second layer made from limeade or coconut water.
