A bright and easy baked chicken recipe featuring a sweet and tangy honey, soy sauce, lime, garlic, and cayenne glaze with a glossy, lightly charred finish.

  • 1 lb (500g) boneless, skin-on chicken thighs
  • 3 cloves garlic, minced
  • 2 tablespoons honey
  • 1.5 tablespoons soy sauce
  • 2 tablespoons freshly squeezed lime juice
  • 3 dashes cayenne pepper
  • 1 big pinch salt
  • Chopped parsley, for garnish
  • Lime wedges, for serving

Instructions

  1. Preheat the oven to 400°F (207°C).
  2. Rub the minced garlic evenly all over the chicken thighs.
  3. Drizzle honey, soy sauce, lime juice, cayenne pepper, and salt over the chicken. Stir to coat the chicken thoroughly with the glaze.
  4. Line a baking sheet with aluminum foil and transfer the chicken and marinade onto it.
  5. Loosely cover the chicken with another piece of foil to prevent the honey from burning.
  6. Bake the chicken for about 20 minutes or until fully cooked.
  7. If sauce pools at the bottom, spoon some over the chicken to coat.
  8. Optionally broil the chicken for about 1 minute to char the skin, watching closely to avoid burning.
  9. Remove from heat, sprinkle with chopped parsley, and serve with lime wedges to squeeze on top.
