Crispy and golden fritters made from grated yellow squash, flavored with Parmesan cheese and seasonings, perfect for a snack or appetizer.

  • 2 medium-sized yellow squashes
  • 1 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1/4 cup chopped fresh herbs (optional)
  • Vegetable oil, for frying

Instructions

  1. Rinse yellow squashes under cold running water and trim both ends.
  2. Grate the squashes using a box grater.
  3. Place grated squash into a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible.
  4. In a large bowl, combine the drained grated squash, 1 cup all-purpose flour, 1/2 cup grated Parmesan, 2 large eggs, 1 teaspoon garlic powder, 1 teaspoon onion powder, salt and pepper; add 1/4 cup chopped fresh herbs if using, and stir until well blended.
  5. Pour enough vegetable oil into a large skillet to cover the bottom and heat over medium until hot (a drop of batter should sizzle on contact).
  6. Using a spoon or small scoop, drop portions of batter into the hot oil and gently press to flatten.
  7. Fry each fritter about 3–4 minutes per side until golden brown and crispy.
  8. Transfer cooked fritters to a paper towel–lined plate to drain excess oil and continue frying the remaining batter.

Never skip squeezing out moisture from the squash to ensure crispiness., For extra crisp edges, add a couple of tablespoons of cornmeal to the flour mix., Experiment with herbs and spices such as dill, oregano, smoked paprika, or cayenne pepper., To make gluten-free fritters, use gluten-free flour blends or almond flour and adjust eggs if needed., Vegan variations can be made by substituting eggs with flax eggs or aquafaba., Alternative cooking methods include baking at 400°F (200°C) for 15–20 minutes or air-frying at 375°F (190°C) for 8–10 minutes., Leftovers can be stored refrigerated for up to 3 days and reheated in a skillet or oven to restore crispness., Fritters can be frozen after cooling; reheat from frozen in oven or air fryer.
