  • ½ cup cornstarch
  • 2 eggs, beaten

  • 2 tbsp ketchup
  • 3 tbsp honey (or maple syrup)
  • 2 tbsp rice vinegar
  • 1 tbsp brown sugar

  • 1 tsp cornstarch mixed with 2 tbsp water (to thicken)
  • 1 tbsp sesame seeds
  • 2 green onions, chopped for garnish

Instructions

  1. Season chicken pieces with salt, pepper, and 1 tbsp soy sauce or tamari.
  2. Coat each piece first in cornstarch, then dip into beaten eggs so fully covered.
  3. Heat oil in skillet over medium-high heat to about 350°F (175°C).
  4. Fry chicken in small batches 4-5 minutes until golden and crunchy; remove and drain on wire rack or paper towels.
  5. Alternatively, bake coated chicken at 425°F (220°C) on parchment-lined sheet for 15-20 minutes, flipping once, until crispy and cooked through.
  6. In a small saucepan, whisk together 2 tbsp soy sauce or tamari, 2 tbsp ketchup, 3 tbsp honey or maple syrup, 2 tbsp rice vinegar, 1 tbsp brown sugar, and 1 tsp sesame oil; warm until gently simmering.
  7. Whisk in the cornstarch slurry and simmer until sauce thickens and becomes glossy.
  8. Toss crispy chicken pieces in sauce until evenly coated.
  9. Sprinkle with sesame seeds and chopped green onions before serving.
