A quick and easy side dish roasting frozen broccoli with garlic, olive oil, and Parmesan cheese to achieve a crispy, flavorful result with minimal fuss.

  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 1/3 cup (30 grams) grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Line a rimmed baking sheet with parchment paper or a silicone baking mat.
  3. Use frozen broccoli straight from the bag; if excess moisture collects after opening, pat the florets dry.
  4. In a large bowl, toss frozen broccoli with olive oil, minced garlic, salt, and black pepper until well coated.
  5. Spread the broccoli in a single layer on the prepared baking sheet, avoiding crowding.
  6. Roast for 20 minutes, flipping the florets or shaking the pan at the 10-minute mark to promote even browning.
  7. Remove the baking sheet and sprinkle grated Parmesan evenly over the broccoli; add red pepper flakes and lemon zest if using.
  8. Return to the oven and roast another 5 to 7 minutes until Parmesan is melted, golden, and broccoli is tender but slightly firm.
  9. Remove from oven and let rest for a couple of minutes to allow cheese to crisp before serving.
