A comforting classic baked rice pudding made with Arborio rice, whole milk, and sweetened condensed milk, flavored with vanilla and cinnamon for a creamy, rich dessert.

  • 1 cup uncooked Arborio rice
  • 4 cups whole milk
  • 1 can (14 ounces) sweetened condensed milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ½ cup raisins (optional)
  • Zest of 1 lemon (optional)
  • Ground nutmeg for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Rinse 1 cup Arborio rice under cold water until water runs clear to reduce excess starch.
  3. In a large saucepan, combine 4 cups whole milk and 1 can (14 oz) sweetened condensed milk. Heat gently over medium heat until warm but not boiling.
  4. Whisk 2 large eggs in a bowl until smooth.
  5. Slowly whisk a small amount of the warm milk mixture into the eggs to temper them, preventing scrambling.
  6. Pour the tempered eggs back into the saucepan with the milk mixture. Stir in 1 teaspoon vanilla extract, 1 teaspoon ground cinnamon, and ½ teaspoon salt until well mixed.
  7. Stir in the rinsed rice, ½ cup raisins (optional), and zest of 1 lemon (optional).
  8. Grease a 9×13-inch baking dish and pour in the pudding mixture.
  9. Bake for 45–50 minutes until the pudding is set and the top is golden brown. Slight jiggle is acceptable and a toothpick test can be used.
  10. Let the pudding sit for 10–15 minutes before serving.
  11. Sprinkle with ground nutmeg (optional) before serving.
