A flavorful vegan dish featuring crispy tofu in a creamy coconut-lime sauce, ready in about 25 minutes. Perfect for quick weeknight meals and easily customizable.

  • 1 cup Jasmine Rice
  • 14 oz Extra Firm Tofu, cubed
  • 1 tbsp Avocado Oil (or olive oil as a simple swap)
  • 2 tbsp Soy Sauce (gluten-free if needed)
  • 1 tbsp Cornstarch (arrowroot powder works well instead)
  • 1 medium Shallot (or yellow onion)
  • 1 tbsp Fresh Ginger (or 1 tsp ground ginger)
  • 3 cloves Garlic (or 1 tsp garlic powder)
  • 1 can Coconut Milk (13.5 oz; light coconut milk optional)
  • 1 tsp Maple Syrup (or agave syrup)
  • 1 tsp Paprika (smoky paprika optional)
  • Juice of 2 Limes (or lemon juice)
  • 1 tbsp Fresh Cilantro (or parsley)

Instructions

  1. Rinse 1 cup jasmine rice, then simmer with the appropriate amount of water per package directions until fluffy and tender.
  2. Drain extra-firm tofu and press for at least 15 minutes to remove excess moisture, then cut into bite-sized cubes.
  3. Heat a nonstick skillet over medium heat and add 1 tbsp avocado or olive oil.
  4. Add diced shallot and cook 2–3 minutes until soft and fragrant.
  5. Add minced garlic and grated ginger and sauté 1 minute.
  6. Add tofu cubes to the pan, sprinkle with 1 tbsp cornstarch, and toss to coat each piece.
  7. Cook tofu without stirring for about 5 minutes until the bottom is golden and crispy, then flip and brown the other side.
  8. Pour in 1 can coconut milk, 2 tbsp soy sauce, 1 tsp maple syrup, 1 tsp paprika, and juice of 2 limes; stir to combine.
  9. Simmer the sauce with tofu for 5–7 minutes, stirring occasionally, until sauce thickens slightly and flavors meld.
  10. Taste and adjust seasoning as needed with salt, lime juice, or sweetness.
  11. Spoon the coconut lime tofu and sauce over cooked jasmine rice and sprinkle with chopped cilantro before serving.
