Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Dice chicken breasts, slice zucchinis, halve cherry tomatoes, shred mozzarella, grate Parmesan, and mince garlic.
  3. Optional: Marinate diced chicken in olive oil, minced garlic, and Italian seasoning for 20–30 minutes.
  4. Heat 2 tablespoons olive oil in a medium skillet over medium heat.
  5. Add diced (or marinated) chicken to the skillet, sprinkle with 1 teaspoon dried Italian seasoning, 1/2 teaspoon salt, and 1/4 teaspoon black pepper; cook 6–8 minutes, stirring occasionally, until no longer pink.
  6. Add minced garlic to the skillet with the chicken and sauté 1–2 minutes until fragrant.
  7. In the greased baking dish, combine the cooked chicken with sliced zucchini and halved cherry tomatoes, mixing to combine.
  8. Spread shredded mozzarella evenly over the chicken and vegetable mixture, then sprinkle grated Parmesan on top.
  9. Bake for 30–35 minutes, until the cheese is bubbly and golden.
  10. Let the bake rest 5–10 minutes out of the oven and garnish with fresh basil if desired.
