A creamy and comforting pasta dish featuring sautéed chicken, mushrooms, garlic, fresh spinach, and Parmesan cheese in a rich creamy sauce, perfect for quick weeknight dinners.

  • 8 ounces pasta (fettuccine or penne are ideal)
  • 1 tablespoon olive oil
  • 2 chicken breasts, cut into bite-sized pieces
  • 8 ounces mushrooms, sliced
  • 3 cloves garlic, minced finely
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 1 cup freshly grated Parmesan cheese
  • 2 cups fresh baby spinach leaves
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Bring a large pot of salted water to a boil, cook pasta according to package directions until al dente, drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Season diced chicken with salt and pepper, cook 5–7 minutes until browned and cooked through, then remove and set aside.
  3. In the same skillet, cook sliced mushrooms 4–5 minutes until golden and soft, then add minced garlic and cook 1 minute until fragrant.
  4. Pour in heavy cream and chicken broth, stir, bring to a gentle simmer and let the sauce thicken slightly.
  5. Return the cooked chicken to the skillet, add the cooked pasta, and stir until everything is evenly coated with the sauce.
  6. Fold in fresh spinach and cook 1–2 minutes until wilted.
  7. Stir in grated Parmesan until melted, then taste and adjust salt and pepper as needed.
  8. Turn off the heat, sprinkle chopped fresh parsley over the top, and serve immediately.

Notes

For added vegetables, stir in sun-dried tomatoes, roasted red peppers, steamed broccoli, peas, or asparagus tips along with the spinach., Protein substitutions include shrimp, turkey, Italian sausage, tofu, or extra mushrooms for a vegetarian version., For a spicy kick, add crushed red pepper flakes while sautéing garlic, a dash of hot sauce, or a touch of cayenne pepper in the sauce., Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 2 months., When reheating, add a splash of broth or cream to loosen the sauce and warm gently over stove or microwave.
