  • 2 teaspoons baking powder (gluten-free if needed)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup plain yogurt (can substitute with plant-based yogurt for dairy-free)
  • 1/4 cup milk
  • 1 large egg
  • 2 tablespoons sugar (can swap for honey or maple syrup)
  • 2 tablespoons vegetable oil, plus extra for greasing
  • 1 medium fresh apple, grated

Instructions

  1. Whisk together the flour, baking powder, cinnamon, and salt in a mixing bowl until well combined.
  2. In another bowl, stir together the plain yogurt, milk, egg, sugar, and 2 tablespoons vegetable oil until smooth.
  3. Grate the apple and gently fold it into the wet mixture until evenly distributed.
  4. Slowly add the wet ingredients to the dry ingredients, stirring just until the batter comes together. Do not overmix.
  5. Heat a non-stick skillet or griddle over medium heat and lightly grease it with vegetable oil.
  6. Pour about 1/4 cup of batter per pancake onto the hot skillet.
  7. Cook until bubbles form and pop on the surface, about 2 to 3 minutes.
  8. Flip each pancake and cook the other side until golden and set, about 2 to 3 minutes.
  9. Turn heat down if pancakes are browning too quickly to ensure even cooking.
  10. Transfer cooked pancakes to a plate and cover loosely with a clean kitchen towel to keep warm while finishing the batch.
