A quick and easy air fryer recipe for tuna steaks marinated in a flavorful Asian-inspired teriyaki sauce. Ready in under 5 minutes, these tuna steaks come out tender with a crisp exterior and a pink center, perfect for a healthy, protein-rich weeknight dinner.

Ingredients

Scale
  • 440 g fresh tuna steaks (4 steaks, albacore or yellowfin)
  • Cooking oil spray
  • 1/3 cup dark soy sauce
  • 2 tablespoons mirin
  • 1/2 tablespoon garlic, finely chopped
  • 1 teaspoon ginger, finely chopped
  • Green onions (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Whisk together dark soy sauce, mirin, finely chopped garlic, and finely chopped ginger in a shallow bowl to make the marinade.
  2. Pat the tuna steaks dry with paper towels.
  3. Place tuna steaks in the marinade, turning once or twice to coat. Marinate for 15–30 minutes, up to 1–2 hours max.
  4. Preheat the air fryer to 170°C (350°F) for 3–5 minutes.
  5. If the marinade contains sugar, wipe off excess to prevent burning.
  6. Lightly spray the air fryer basket with cooking oil.
  7. Arrange the tuna steaks in a single layer in the basket without crowding.
  8. Quickly spray the tuna steaks with cooking oil.
  9. Air fry the tuna for 2 minutes, then add 1–2 minutes more as needed for desired doneness based on thickness.
  10. Use a quick-read thermometer to check: 50–52°C for rare, 54–57°C for medium, 63°C for fully cooked.
  11. Remove the tuna from the air fryer and let rest 1–2 minutes.
  12. Slice the tuna across the grain for maximum tenderness before serving.

Notes

Drying the tuna well before marinating helps the marinade cling better and results in a nice sear., Do not crowd the air fryer basket; cook in a single layer for even cooking., Keep a close watch on cooking time; tuna cooks quickly and can dry out if overcooked., Use a thermometer to nail your preferred doneness precisely., Leftovers keep well for up to 3 days in an airtight container in the fridge., Reheat gently in the air fryer or enjoy cold to prevent drying out., Recommended to thaw frozen tuna fully before cooking for even results., If using a marinade with sugar, wipe excess marinade off the tuna before air frying or cook at a slightly lower temperature to avoid burning.
